Lemon Crepes With Caramelized Citrus

Lemon Crepes With Caramelized Citrus

1 cup flour
1 1/4 cups milk
3 large eggs
1 tbsp grated lemon zest
2 tbsp lemon juice
3 cups citrus segments (lemon, lime, orange, grapefruit)
1/4 cup sugar
1/4 cup butter
1/2 cup orange juice
1 tsp crushed pink peppercorns
1 tbsp chopped mint

1)    Place the eggs in a bowl and whisk.  Add a third of the flour and mix until smooth. Add another third of the flour and again mix until smooth.  Then add the last third of flour and mix until smooth (last time it will become quite stiff). 

2)    Now add a third of the milk and whisk until smooth, then add the remaining milk, lemon zest and lemon juice.

3)    Season with salt, pepper and leave the batter to sit in the fridge for at least 20 minutes before making the crepes.

4)    When making the crepes, use a non stick pan over medium heat. Pour a very thin layer of the crepe batter in the pan.  Cook over the heat until the crepe loosens, flip the crepe and finish for 30 seconds.  Remove and set a side.

5)    Pour the sugar in a separate pan and heat over medium to high heat.  Once the sugar melts to a caramel, add the butter and orange juice. Whisk into a sauce.

6)    Add the citrus segments, pink peppercorns and mint. 

7)    Stuff inside the crepes, dust with icing sugar and serve.

Serves 4.
