Charred cherry tomato bruschetta

Ingredients:

4 cups colourful cherry tomatoes

2 tbsp extra-virgin olive oil

1 tbsp red wine vinegar

1/4 cup packed basil leaves, chopped (7g)

1/4 tsp salt

6 1-in. slices crusty Italian bread (300g)

2 garlic cloves, cut in half

Method:

1. Preheat barbecue to medium.

2. Slice tomatoes in half and transfer to a large bowl. If tomatoes are large, slice into ½-in. pieces. Stir in 1 tbsp oil, vinegar, basil and salt. Season with pepper.

3. Barbecue bread slices until golden, 1 to 2 min per side. Transfer to a plate and rub each with piece with garlic. Drizzle with tomato liquid, then spoon tomatoes on top. Drizzle with remaining oil.

Serves 6
