Instead of making stuffing with white, refined bread (that will cause excess weight gain!), I am a big fan of opting for whole grain bread.

On Thanksgiving, one of my favorite parts of the meal is the stuffing! Instead of making stuffing with white, refined bread (that will ring the insulin bell and cause excess weight gain!), I am a big fan of opting for whole grain bread.

The whole grain-stuffing recipe below is a definite crowd-pleaser that also offers omega 3’s, fiber, minerals and vitamins.

Harvest Turkey Stuffing

Ingredients

2 loaves whole grain bread       

1 cup diced onions           

3 apples, peeled and diced

3/4 cup walnuts

1 cup diced celery               

1 cup dried cranberries           

Approximately 1 cup (see directions below) water               

1/4 cup finely chopped fresh sage   

1/4 cup finely chopped fresh thyme          

1/2 tsp salt            

1/2 tsp pepper         

1 tsp garlic powder

3 eggs

Directions

1. Separate slices of bread and spread them out on the racks in your oven.  Set at 250 degrees and allow to bake for 40 minutes.  Remove from oven, allow to cool and cut into 1-1 ½” cubes.

2. Peel and dice onions and apples.  

3. Wash and dice celery.  

4. Combine diced apples, onions, celery with walnuts, cranberries and diced whole grain bread.

5. Add in sage, thyme, salt, pepper and garlic salt.  Mix thoroughly.

6. Crack eggs into a separate bowl.  Beat until even.

7. Pour the mixture over the bread mixture and mix thoroughly.  Test the mixture for moisture.  The mixture should hold together when a handful is squeezed.  If it appears too dry slowly add more water and continue to mix until the right consistency is achieved.  

8. Stuff turkey.  If you have excess stuffing, it can be wrapped in aluminum foil and baked in the oven for 40 minutes.  

9. Remove stuffing from turkey and allow cooling for 10 minutes prior to serving.
