Sticky carrot, ginger, and maple cake

Ingredients:

2 tbsp grated ginger

1 ½ tsp cinnamon

¼ tsp ground cloves

2 cups all purpose flour

2 tsp baking powder

pinch salt

1 ¼ cup hot water

¼ cup corn syrup

¼ cup molasses

¼ cup maple syrup

¾ tsp baking soda

6 tbsp butter, softened

¾ cup packed brown sugar

1 large egg

1 ½ cups grated carrots

Method:

1)    Preheat oven to 350F, then butter and flour 9 inch square pan.

2)    Combine flour, salt, baking soda, baking powder and spices.  Set aside.  

3)    In a mixer, cream the brown sugar and butter until light and fluffy.  Add the egg and mix until incorporated.  

4)    Combine the liquids and slowly add to the sugar and butter mixture.  

5)    Combine along with the carrots and ginger to the dry ingredients and gently mix until the batter comes together.  

6)    Bake for 30-40 minutes or until the center is set.  The finished cake should be tacky in the center.
