Pasta salad with citrus

Citrus vinaigrette ingredients:

  • 1 orange, grated zest only
  • 1 lemon, grated zest only
  • 3 tbsp orange juice
  • 3 tbsp lemon juice
  • 1 tbsp Dijon mustard

Salad ingredients:

  • ½ lb tubetti or other short pasta
  • 1 ½ cups arugula (optional)
  • 1 ½ cups grated carrots
  • ½ cup pine nuts, toasted
  • 2 green onions, chopped
  • ¼ cup olive oil
  • Parmigiano-Reggiano shavings, to taste
  • Salt & pepper

Method:

In a bowl, combine all the vinaigrette ingredients. Then set aside.

In a large pot of salted boiling water, cook the pasta until tender. Drain and oil lightly. Let cool completely.

In a bowl, combine the pasta and vinaigrette with the remaining salad ingredients except for the cheese.

Season with salt and pepper. Then garnish with Parmesan shavings.
