This simple salad makes a perfect bag lunch to take to work or school, because it’s even better after the ingredients have had a chance to marinate a little.

Smoked turkey spinach salad

Ingredients for salad:

  • 3 ounces lean smoked turkey, slices or chopped
  • ¾ cup shredded low-fat cheese
  • ¾ cup fresh corn kernels
  • ½ cup canned black beans, drained and rinsed
  • ½ cup halved cherry tomatoes
  • ½ cup chopped bell pepper (any colour)
  • ¼ finely chopped red onion
  • 2 cups fresh baby spinach

Ingredients for dressing:

  • 2 tbsp chopped fresh cilantro
  • 2 tbsp low-sodium canned or fresh tomato juice
  • 1 ½ tsp minced garlic
  • 1 ½ tsp extra-virgin olive oil
  • 1 ½ tsp sherry vinegar or other vinegar
  • Juice of ½ lemon
  • Salt and pepper

Method for dressing:

In a large bowl, combine cilantro, tomato juice, garlic, olive oil, vinegar, and lemon juice

Whisk until well blended. Season with salt and pepper

Method for salad:

Add turkey, cheese, corn, beans, tomatoes, bell pepper, and onions. Toss well.

Divide spinach between 2 plate. Top with turkey salad.
