Lemon mousse fondue

This drool-worthy mousse fondue is simple to make, easily portable, and can even join you on a picnic.

Nothing says summer like a lemony dessert, and this is one for the books! This drool-worthy mousse fondue is simple to make, easily portable, and can even join you on a picnic.

Lemon mousse fondue 

Ingredients:

  • zest 1 lemon, set aside
  • ¾ cup white granulated sugar
  • 1 tbsp + 1 ½ tsp cornstarch
  • ¼ cup + 2 tbsp fresh lemon juice, approx. 2 lemons
  • 1 omega-3 egg
  • 1 tbsp unsalted butter
  • 2 cups plain 0% fat Greek style yogurt
  • 10-12 fresh strawberries or berries of choice, rinsed & dried

Method:

Note: This needs to be made a day ahead!

Place a medium wire mesh strainer over a medium bowl, set aside.

In a small saucepan whisk together sugar, cornstarch, lemon juice and egg.

Turn heat to medium low and stir until the mixture comes to the boil. Then reduce heat so the mixture is gently boiling, stirring constantly for 3 minutes, you need to make sure the cornstarch is cooked.

Remove from heat and stir in butter until melted.

Pour hot lemon mixture through strainer that you had set aside. Then pour strained lemon mixture into a heat proof jar, cover with a lid and store in the fridge for up to 1 week.

Gently whisk the lemon curd into yogurt until well incorporated.

Makes 2 ½ cups
