Spiced orange-maple roasted pork tenderloin

Makes 6 servings

Ingredients:

  • 1-1/2 lbs (680 g) pork tenderloin
  • ½ cup pure maple syrup
  • 2 tbsp each reduced-sodium soy sauce and ketchup
  • 1 tbsp Dijon mustard
  • 2 tsp grated orange zest
  • 1-1/2 tsp each curry powder and ground coriander
  • 2 tsp minced garlic
  • 1 tsp Worcestershire sauce

Method:

Trim pork of all visible fat. Place pork in a large glass or ceramic baking dish. Whisk together all remaining ingredients in a medium bowl. Pour over pork. Turn pork tenderloin to make sure it’s well coated in marinade. Cover with plastic wrap and refrigerate for at least one hour.

Remove plastic and roast (uncovered) at 350F for 40 minutes. Pork should be slightly pink in the middle.

Let pork stand for 10 minutes before slicing. Slice thinly. Drizzle extra sauce over pork and serve immediately.
