- Break the eggs into a mixing bowl. Add egg whites and beat until smooth.
- Add diced onion, red pepper, cilantro, broccoli flowerets, green olives, salt and pepper. Mix thoroughly.
- Divide mixture into 12 medium-sized, greased muffin tins and bake at 400 F for 15 minutes.
- Remove from oven and cool. Serve immediately or wrap and freeze for grab-and-go protein options.
