Mini quiche to go

Quick, convenient, quiche! Just grab-and-go these compact and nutrient-packed breakfast solutions!

INGREDIENTS

METHOD

  1. Break the eggs into a mixing bowl. Add egg whites and beat until smooth.
  2. Add diced onion, red pepper, cilantro, broccoli flowerets, green olives, salt and pepper. Mix thoroughly.
  3. Divide mixture into 12 medium-sized, greased muffin tins and bake at 400 F for 15 minutes.
  4. Remove from oven and cool. Serve immediately or wrap and freeze for grab-and-go protein options.
