Pineapple Mezcal Sour

The smokier cousin of Tequila.

Simple Syrup

METHOD

Method: 

  1. Add mezcal, lime juice, pineapple juice, simple syrup and egg whites to a cocktail shaker or mason jar. Shake until frothy. Fill the shaker or jar with ice and continue to shake until nicely chilled.
  2. Pour cocktail into a coupe (or any cocktail glass you like) and top with a few drops of bitters. For a professional finish, drag a toothpick through the bitters to create a swishy pattern and garnish with edible flowers. Enjoy!

Simple Syrup 

  1. Add sugar and water to a small saucepan and bring to a simmer. Stir until all the sugar has dissolved. Remove from heat and let cool completely. Store in a mason jar in the fridge for up to 3 weeks.
