Green curry chicken

A rich green curry with a bit of kick.

METHOD

  1. In a large pot or wok, heat sesame oil, toast lemongrass, ginger, garlic.
  2. Add green curry paste and fish sauce, deglaze with coconut milk.
  3. Add lime juice and chicken stock.
  4. Bring to a soft simmer and add sliced chicken and rest veggies on top. Simmer for a 5 minutes.
  5. Adjust seasonings and serve with rice, garnish with coriander.
