Spinach roast garlic and feta spiral pie

A deliciously warm and flaky phyllo pastry!

  1. In a small sauce pot cover garlic with olive oil and simmer until golden. Remove and add garlic, use the olive oil for brushing phyllo.
  2. Preheat oven to 400F.
  3. In a medium bowl mix garlic, spinach, cheese, egg and a healthy amount of black pepper.
  4. Cut phyllo sheets in half lengthwise and brush with olive oil. Stack 3 sheets on top of each other and place some spinach mixture on the edge. Roll up like a big stoggie, then roll into a spiral. Place in the middle of the pie pan. Continue with the spiral until the pan is full.
  5. Brush with oil and bake for 23 minutes of until golden.
