Delicious mandelbroit cookies recipe

A treat to celebrate Hanukkah!

Celebrate Hanukkah with this delicious recipe for mandelbroit cookies!

INGREDIENTS

METHOD

1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.

2. In a stand mixer, combine the eggs, oil, sugar and vanilla. Beat to combine. Add the flour, oatmeal, pecans, baking powder and salt. Beat again until just combined. Stir in the apricots.

3. Divide the dough into 3 logs approximately 12 inches long x 2 ½ inches wide. Place them on the prepared baking sheets and bake for 25 to 30 minutes. They should be firm but will still be pale. Remove from oven and cool for 5 minutes.

4. Lower the oven temperature to 300°F.

5. Add cinnamon sugar to a plate or bowl.

6. Using a sharp knife, slice on the diagonal into ¾-inch pieces. Gently toss half-baked cookies in cinnamon sugar then place back on baking sheets, cut side up, 1 inch apart.

7. Bake for 30 to 35 minutes, or until golden brown. Store at room temperature in a sealed container for up to 1 week.
