Honey roasted apricots

Preserve the taste of summer with professional home economist Mairlyn Smith's honey roasted apricots!


  • 3 lbs approx. 28 medium ripe apricots rinsed, pat dry and halved
  • 3/4 cup liquid honey


  1. Preheat oven to 250F. Line a large rimmed baking sheet with parchment paper.
  2. Line the prepared pan with the apricot halves, peel side down. Drizzle with honey. Roast in the oven for 2 hours. Remove and let sit for 5 minutes.
  3. Transfer into a food processor and blend until smooth or if you prefer slightly chunky. They are very soft, so this all happens really quickly.
  4. Freeze in ½ cup portions. Use as a topping for yogurt, camembert, or as an ingredient in a chicken or pork dish.
