Here’s cookbook author Sandi Richard’s easy meal for on-the-go families: a cheesy meatloaf which can also be made into cheeseburgers! Serve with baked potatoes stuffed with the toppings of your choice.

Cheesy meatloaf

 
Ingredients:

2 lbs or 900 g ground beef, extra-lean
2 tbsp onion flakes
1 tbsp garlic and herb seasoning, salt-free
2 tsp hot pepper relish, or chopped up jalapeños (optional)
2 eggs
3/4 cup salsa (mild, medium or hot)
1/2 cup 1% milk
1 1/2 cups breadcrumbs
1/2 cup light cheddar cheese, shredded
1/4 cup barbecue sauce
1/2 cup light cheddar cheese, shredded (optional)

Method:

1. Preheat oven to 375 F.

2. Combine ground meat, onion flakes, spice, hot pepper relish, eggs, salsa, milk, breadcrumbs and shredded cheese together in a large bowl until well combined.

3. Fill a large plastic resealable bag with meat. Form meat in the shape of a long tube. Remove from bag and place on a broiler pan or a cooling rack on a pan.

4. Spread barbecue sauce on top of meatloaf and place in preheated oven. Set timer for 60 minutes or until internal temp is 160 F.

5. Rinse potatoes. Wrap individually in foil. Cook at the same time as meatloaf.
