Mini frittata

A quick, healthy and kid-friendly breakfast recipe.



  1. Break the eggs into a mixing bowl and beat until smooth.
  2. Add diced onion, red pepper, cilantro, broccoli florets, green olives, salt and pepper. Mix thoroughly.
  3. Divide mixture into 12 medium-sized, greased muffin tins and bake at 400 F for 15 minutes.
  4. Remove from oven and cool. Serve immediately or wrap and freeze for grab-and-go protein options.
