Corn avocado + crab lettuce wraps with ginger mayo

Ginger Mayo: 
In bowl combine mayonnaise, lemon juice and ginger; stir to combine.

Assembly:
Divide mayonnaise into 8 lettuce leaves, spreading slightly. Divide all other ingredients into leaves and top with any other desired toppings.

Serving Tip:

-For a stunning backyard BBQ appetizer serve on top of wine glasses filled with your favourite summer wine, sparkling drink or mocktail.

-If inner leaves are too small to make full lettuce wraps, make one-bite appetizers- just adjust the filling ingredient quantities accordingly.

-If the leaves are too delicate, buy two heads and double them up!

-If you can’t find crab meat, use surimi (imitation crab meat) instead.
