INGREDIENTS
- 2 cups finely sliced red cabbage
- 1/2 large bunch kale stalks removed, chiffonade
- 1/4 large red onion finely sliced
- 1/2 cup dried cranberries
- 1/4 cup green pumpkin seeds
Dressing
- 1/4 cup low-fat mayo
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
METHOD
In a large bowl toss together: cabbage, kale and red onion.
For the salad dressing: In a small bowl whisk together mayo, vinegar and honey until creamy smooth. Pour over kale mixture and toss well to coat.
At serving time, add the cranberries and pumpkin seeds. Toss well and serve.
