Brunched Up Monte Cristo Sandwich

Special tools: cast iron pan ring mold

  1. Cut 4 slices of sourdough 2 inches thick and punch out with a large ring mold. Cut a small pocket and stuff with 1.5 oz Swiss cheese


  1. In a mixing bowl beat 6 eggs with vanilla, cinnamon and salt. Place bread in and let absorb.
  2. In a medium heat cast iron pan melt butter in a splash of olive oil. Caramelize bread in all sides. Toss in oven for 3 minutes at 400.
  3. In a medium pot poach 4 eggs.
  4. Remove bread and plate. Top with poached eggs, garnish with greens and prosciutto.
  5. Mix maple syrup with chillies, drizzle over entire dish and serve.
