- Lay out both tortillas and add half the mozzarella to the bottom half of each.
- Then place plum, brie and cherry pieces evenly across the bottom half.
- Top with remaining cheese and fold over the tortilla to create a half moon shape.
- In a large pan on low-medium heat, add cooking oil.
- Sear quesadillas until golden brown on both sides then remove.
- Combine sour cream and chives.
- Slice and serve topped with chive sour cream.
