Fruit quesadilla with chive sour cream

A delicious snack loaded with fresh fruit in a crunchy quesadilla shell!


  1. Lay out both tortillas and add half the mozzarella to the bottom half of each. 
  2. Then place plum, brie and cherry pieces evenly across the bottom half. 
  3. Top with remaining cheese and fold over the tortilla to create a half moon shape. 
  4. In a large pan on low-medium heat, add cooking oil. 
  5. Sear quesadillas until golden brown on both sides then remove. 
  6. Combine sour cream and chives. 
  7. Slice and serve topped with chive sour cream.
